XVII Festival do Negalho da Bairrada

The event aims to highlight this regional gastronomic delicacy, the negalho, a snack that also carries the weight and strength of our local cuisine's tradition. The main base of this dish is goat stomach (old goat), but the distinguishing feature is in the filling — here the stomach is stuffed with beef, pork, chouriço and other seasonings, rather than with tripe, as happens elsewhere — forming a small ball that, after being sewn, goes into the oven in a caçoila, a preparation very similar to chanfana. This tasting is complemented by a diverse programme of cultural entertainment. Venue: Sede da Associação Cultural e Recreativa de Enxofães.
