DESCRIPTION:The event aims to highlight this regional gastronomic delicacy
\, the negalho\, a snack that also carries the weight and strength of our
local cuisine's tradition. The main base of this dish is goat stomach (old
goat)\, but the distinguishing feature is in the filling — here the sto
mach is stuffed with beef\, pork\, chouriço and other seasonings\, rather
than with tripe\, as happens elsewhere — forming a small ball that\, af
ter being sewn\, goes into the oven in a caçoila\, a preparation very sim
ilar to chanfana. This tasting is complemented by a diverse programme of c
ultural entertainment. Venue: Sede da Associação Cultural e Recreativa d
 e Enxofães.
